  • Heat a pan over high heat until smoking hot. Add a small amount of butter or oil to the pan, enough to coat the bottom.
  • Place the scallops in the pan, leaving space between each scallop to avoid overcrowding.
  • Cook the scallops for about 2-3 minutes per side, without moving them, until they develop a golden brown crust.
  • Use tongs to carefully flip the scallops to the other side and cook for an additional 2-3 minutes, until they are opaque and firm to the touch.
  • Remove the scallops from the pan and let them rest for a minute before serving to retain their juiciness.

Note: If your scallops turn out wet or the pan temperature drops, quickly pat them dry or adjust the heat accordingly to ensure a proper sear.
