Mouthwatering Pork Carnitas

Equipment

  • Large Sauce Pot/Casserole/Dutch Oven
  • 3 Qt Baking Dish

Ingredients

  • 3 TBS Cooking Oil
  • 3 lb Pork Shoulder (Pork Butt) (cut into large cubes)
  • 1 Small Onion (chopped)
  • 3 cloves Garlic (minced)
  • 1 TBS Salt
  • 1 TBS Chili Powder
  • 1 tsp Oregano
  • 1 tsp Cumin
  • 2 cans Chicken Broth (14.5oz cans)
  • 3 TBS Lime Juice ((2 limes juiced))

Instructions

  • Season pork with salt on both sides.
  • Heat oil in your large pot.
  • Sear pork a bit on both sides.
  • Add the rest of the ingredients to the pot. Bring it to a boil. Reduce heat and simmer for 2 hours.
  • Preheat oven to 400°.
  • Transfer pork and half of the cooking broth to a baking dish. Cook in oven for 30 mins.
  • Remove from oven and shred pork with forks to your desired consistency.
  • Serve immediately.
