Perfectly Seared Scallops

Indulge in perfectly seared scallops with a golden brown crust, tender interior, and burst of flavor. This dish is a culinary delight that's sure to impress.

Equipment

  • Cast Iron Skillet
  • Spoon

Ingredients

  • 1 lb Sea Scallops
  • Salt and Pepper to taste
  • Butter or oil

Instructions

  • Pat dry the scallops with paper towels to remove excess moisture.
  • Season the scallops with a pinch of salt and pepper on both sides.
  • Heat a pan over high heat until smoking hot. Add a small amount of butter or oil to the pan, enough to coat the bottom.
  • Place the scallops in the pan, leaving space between each scallop to avoid overcrowding.
  • Cook the scallops for about 2-3 minutes per side, without moving them, until they develop a golden brown crust.
  • Use tongs to carefully flip the scallops to the other side and cook for an additional 2-3 minutes, until they are opaque and firm to the touch.
  • Remove the scallops from the pan and let them rest for a minute before serving to retain their juiciness.
  • Serve the perfectly seared scallops hot with your favorite side dishes or sauces.

Note: If your scallops turn out wet or the pan temperature drops, quickly pat them dry or adjust the heat accordingly to ensure a proper sear.

Dry Those Scallops ASAP:​

Time is of the essence! Grab a paper towel and dry those scallops as quickly as possible. We’re not going for a beauty pageant here, so don’t worry about being too gentle. Just get them as dry as your humor on a Monday morning.​

Turn Up the Heat!​

Ain’t nobody got time for a lukewarm pan! Crank up the heat to high and get that pan smoking hot. Don’t waste time waiting for it to warm up slowly. We need that sear ASAP, just like our morning coffee.

Butter or Oil? Go All In!​

Don’t be skimpy! Add a generous amount of butter or oil to the pan. We’re not counting calories here, so go all in! Let that liquid gold work its magic on your scallops.​

Give Them Some Space, No Crowding Allowed:​

Scallops need some personal space to shine. Avoid overcrowding the pan like it’s a crowded elevator during rush hour. Give them some breathing room so they can do their thing.​

Patience is a Virtue, But So is Efficiency:​

We get it, time is precious! So, while patience is a virtue, we also need to be efficient. About 2-3 minutes per side, depending on the size of your scallops, should do the trick. Don’t flip them too soon.​
